LOL! I'll see if I can remember, the cold ones are flowing pretty good today! Did butterfly the boneless, skinless breast and pound them out a bit. Brine in a qt of water, 1/4 cup of salt and 1/4 cup of brown sugar for an hour. Some parsley, mushroom, bread crumbs, EVOO, garlic and onion mixture was chopped in the processor and spread on the breast. Some cheap deli shaved ham on top of that, some real mozerella on top of that. Rolled and then wrapped with bacon. (Bacon just makes everything better) and tied. On indirect at 260 dome, apple and pecan smoke. Waiting for them to finish. Will try and get some pics when done.

At 260 dome, how long did they take to cook?
Bacon looks good -
At 260 dome took about 1.5 to 2 hours. These were a bit overkill, a little too much going on between the smoke, the bacon, the brine, the chicken kind of got lost. May try again a bit different. Without the bacon or brine or less smoke or go with a higher temp for a faster cook. Alot of my cooks are pretty much experiments, what I like, I'll cook again, failed experiments are modified and tried again. This wasn't a complete failure but does need work.
