This was my first low and slow cook. 7.8 pounds, basic rub, temperature between 200 and 240 for 19 hours. Then I had to crank the temperature to nearly 300 for another hour to finish it off.

Looks great. PP is so tasty. Beats just about every beef burger I've ever had.
Aim for a dome temp closer to 250. In an indirect cook, the grill at gasket level will be about 25 degrees cooler, and right after putting the cold meat, closer to 50 degrees. Because the butt needs to get to around 190 to be pullable, any temperature below 225 will make the cooking take forever.
Some people even do butts as high as 350. I tried that once, and the bottom got a little burnt, so I usually aim at 250-270. -

Could you arrange for a meteorite to land in my back yard!! :laugh: I will be doing a 7.3 pound butt next weekend. Looking for about 11-12 hrs at 250-270. Hope mine looks as good.

Wow, 19 hours for one butt! Nice results
I start them off at 180 - 200, then let them ride -- the temp gradually rises as the meat cooks, often ending up near 280 near the end without adjusting -- unless the wind is playing :laugh: -
