Texas Style Sausage on Egg?

I was born and raised in eastern NC. When we went to a bbq restaurant, you had bbq, fried NC seafood, and maybe some ribs on the menu. I have always been intrigued by restaurants in Texas serving smoked sausage. What kind of sausage is it? Is it all beef or is it all pork? Rough time frame and what kind of sauce (I'm assuming red)? Want to try it out on my Egg, but I don't know where to start!

Here is one method.
Sausage, Pork, Butt, World Famous Genuine Texas Hotlinks, Bigwheel, Thirdeye
Grind the meat, mix in the seasonings and water until well blended. Let rest overnight for seasonings to blend. Package the bulk sausage in ½ or 1 pound packages. Now, if you want a nice and SPICY...well, HOT sausage, here is one by Bigwheel. It can be stuffed or used for fatties. If you are eating it fresh, you can omit the Tenderquick. I also do not use the MSG. This one does not really need a rub, the flavor kind of stands on it's own. Serving this with the ice cold beer is mandatory.
INGREDIENTS:
5 lbs boston butt
2 lbs lean beef
1 bottle cold beer
2 Tbs fresh ground black pepper
2 Tbs crushed red pepper
2 Tbs Hungarian paprika
1 Tbs cayenne pepper
1 Tbs minced fresh garlic
1 Tbs granulated garlic
2 tsp ground corriander
1 tsp kosher salt
1 tsp ground bay leaves
1 tsp whole anise seeds
1 tsp whole mustard seeds
1 tsp sugar
2 tsp ground thyme
6 tsp Mortons Tender Quick
1 tsp MSG
Procedure:
1 Mix all the spices, cure, and garlic into the beer and place in refrigerator while you cut up the meats into grinder sized pieces. Dump the spiced beer on the cut meat and mix it up good. Run spiced meat mixture through the grinder coarse or medium plate and stuff into medium hog casings. Smoke or slow grill till they are done. Wrap in a piece of bread and slap on the mustard heavy. Wash it down with ice cold beer.

So it is a beef and pork sausage. I used to work at a German restaurant that made an amazing smoked beef and pork kielbasa. Around here, all sausage is all pork. Which is why it is only served at breakfast.

Texas has beef sausage, pork sausage and chicken sausages, plus others. Some are a blend of different meats. If you want to try some really good ones, try these.

Kielbasa usually is a mixture of pork and beef. I think most Texas links are made with beef?

Thank you! I enjoyed the picture and the last line of the home page: Just one bite and you’ll know why, Earl Campbells is as BIG and BOLD as the state itself. Have to get some of that. The flaming drum smoker in the back reminds me of my childhood.

They are not. Beef sausages would probably make up 30% of what you would find in the stores here.
