We made our first set of ribs on the XL yesterday! We messed up in the beginning and let the temp get to about 370. It took 3 stinking hours to get to 250 where we were finally able to stabilize it. Lesson learned. The ribs were great. I made my own rub and put in a tad bit too much cayenne, so it was a little too spicy. Sauced one with Sweet Baby Rays and the other with Famous Daves.

Hubby never believed that it would hold at 250 for longer than an hour or so. He fully admitted last night that he was wrong and started to go through all of my BBQ/grilling cookbooks because he was excited about all of the new possibilities. :)

I went to Restaurant Depot today and used my KCBS membership to do some shopping. I stocked up on some lump that was on sale for $7.99 a bag... the same size of which goes for about $22 at my local hardware store (I don't live near a Wal-Mart). Thanks to everyone who posted the tip about it being on sale there!
