Well I've never been a fan of brisket in any form. I actually avoid it at even the best BBQ joints cause it doesn't do it for me. I simply don't consider it very flavorful. However, with the arrival of my new son Declyn I figured it was time to do a brisket on the egg. My life has been turned a little upside down so why not try and do a brisket that I think is worthy of putting all the effort in to.

I did a two step cooking method on the brisket, first in the egg and then in the oven. Came out pretty well.

On to the cook:

Here is a 6 pound brisket rubbed down the coarse Dizzy Dust, rosemary and brown sugar. I did this the day before and put her in the fridge overnight.

Here is the brisket after 6 hours over hickory wood at 225 degrees. Got some good smoke flavor in the meat.

Prepping for the finish in the oven I made some homemade Apple BBQ sauce. Recipe for that is: Apple BBQ sauce - 1 cup of apple sauce, 1 cup ketchup, 1/4 soy sauce, 1/2 cup honey, 2 chipotle peppers, 1/4 molasses, 1 tbs worcstecher sauce, 1 glove garlic, 1 medium sized onion, diced finally, I lemon, mix all, make sure to crush peppers.

Into the oven covered by the BBQ sauce at 350 degrees. Make sure you use heavy tin foil to seal the tray nicely. You want the moisture to stay in the meat.

After 2 hours she reached 195 degrees and was done. I let the brisket rest for about 45 minutes to redistribute the juices.

Took the BBQ sauce from the cook and all the drippings and reduce it by half to make a really rich BBQ sauce. I skimmed the fat off when it finished reducing.

Started slicing the brisket up for dinner.

Made some really nice reduced BBQ sauce smothered brisket sandwiches for dinner.

The brisket came out great, but I'd still say that brisket is pork butts ugly step sister. Something about brisket just reminds me of my grandma's pot roast, which is not a compliment. All that work and a steak done in 10 minutes over high heat tastes way better and beefier.
