made a teeny tiny error today... we are doing Johns ham for Sunday dinner and decided I wanted his wonderful sourdough that he calls "24" hour sourdough bread. he was kind enough to bring me some of his special strain of starter and in a very special jar to boot. so I read it all though and think cool I can do this. got it out today and fed it and set it on the counter and just double checked the bread directions... it takes 4 days to do this!!! to days to proof the starter and two days for the bread! we will have sourdough about wed MAYBE  I can hear him now...." oh child..." shaking his head and smiling

Don't worry Julie, It will taste just as good Wednesday.
-
actually it will be better LOL I do not have to share it with 8 other people
-
Julie, you could prepare egret's sourdough pancakes with Maine blueberries on Easter. They are yummy! It does not require lead time.
-
those are the sole reason I asked him for his recipe Rebecca! that is one of my fondest memories of the Pat fest!
-
Rebecca...I think it's going to be a few months before Julie sees any Maine blueberries! They had spits of snow yesterday.

Julie,
That starter is pretty active. If you need it Sunday I'd give it a feeding tonight and go through the making/baking process tomorrow, omitting the overnight refrigerator step. I've skipped the refrigerator step many times due to time constraints and it came out fine. It would be better, though, if you fed it tonight and two times tomorrow per the directions but, depending on what time you need it Sunday, this may not work for you. That particular starter strain I gave you would rise to the top of the jar after a couple of feedings so you'd be safer to wait until Sunday. If you can't, go ahead with it anyway. My guess is it'll come out ok......it'll probably take longer to rise before you bake it. -
All is good John we will have it wed and love it anyways. will just start some other bread in the bread machine and do rolls. just felt stupid that I did not pay attention and I read it a couple of time too!

not funny... not at all.... snow... from over 90 to under 40 in two days sucks!!

I've got your starter going now. Where's the recipe everyone is talkin about? Any help appreciated.
Here's your starter getting happy in a bowl taken a few minutes ago, began feeding this mornin.

More than yummmmy, those pancakes were the best ever!
I got pictures, will post them tomorrow.
Now if only I had egret's sourdough recipe.... -
Clay,
I just sent it to you due to the file size........ -
John,
Thanks buddy. Looking forward to baking bread, sort of a religious thing with a special meaning for Sunday.
Got your starter from eenie meenie, no directions. But then she probably thought I don't need them.
Guess what's also on the menu....
-
Any chance you can share your sourdough starter recipe? Would love to try it.
Best,
Chuck
