Felt like chicken tonight

And hoping like the devil I feel like chicken for the rest of the week as well! It's not entirely unusual for me to cook too much - I've got a LOT of chicken left over. Chicken sandwiches and chicken salad are defnitely on the menu this week at my house.

    Nice meal Elizabeth!! Might be leftovers, but I bet they'll be good leftovers!! we do the same thing, the kids come by a couple of times a week just to raid the fridge :)

    Thank you Judy- I love my flowers (and dessert too). Can't keep the desserts around the house long though - usually end up taking the leftovers to work on Mondays... ;)

    Thanks Beli - I could eat little green peas every day and never tire of them. My husband is not quite as fond of them....he does not know what he's missing. ;)

    I think I inherited the trait from my Dad....he always cooked a ton, no matter how many people were coming for a meal. He didn't want anyone to leave his house hungry. I think it's a good thing. ;)

    Hadn't thought about enchiladas.... :ohmy: Stopped at the grocery store on the way home from work tonight and picked up tortillas for quesadillas. The more I look at the leftovers I'm starting to think "what was I thinking"! :laugh:

    For pete's sake, don't forget the chicken burritos! Chop up some leftover, roll up in a large tortilla with lettuce, chopped onion, tomato, hot salsa......yeah!
