new cast iron skillet

I just bought a cask iron skillet. Any ideas on how to use on the grill?

350 direct for eggs and scrapple , indirect for skillet corn bread
real hot for blackened anything
my favorite is steak au poirve.. sear pepper crusted steak in hot CI remove and finish meat on grill while making conganc cream sauce in the cast iron, -

butter, thinly sliced potatoes, onions, and some minced garlic. 400ish cook until browned on one side, then try to flip and keep it reasonably together, brown the other side. loosely resembling a potato galette
terrific for making fajitas or sliced veggies or searing meats. pretty much only limited by your imagination -

Bill, I never thought of steak au poivre on the Egg! It's one of my favorites. I would make your incredible scalloped potatoes with that, but it's too much creamy with the cognac sauce.
