Howdy !
Found some time to cook and take pics again today - winters been hard here and my day job is killing me during the winter each year.
I hope to be around more often come spring.
Here we go - i still had a nice bone in ribeye steak and two lobster tails in the freezer.
So i wrapped the meat of one of those lobster tails in Pancetta and cooked it on the Egg to 135 F. Then i cut a pocket into the steak and stuffed the lobster meat into the steak.
Seasoned the Steak with rosemary, garlic, sea salt flakes and EVOO and let it warm up for 30 minutes.
The other Tail was basted with a homemade roasted garlic and jalapeno Butter while cooking on the egg.
Had some Asparagus on roasted Pancetta with parmesan creme
and a salad with roasted Avocado and Balsamic vinegar as a side.
It was good enough to eat

Here, near Montreal, winter is long and cold. We had some rib eye yesterday for dinner, but believe me, I will try your menu soon,
