I'm not taking away anything from all the great posts here about recipes for egging your turkey, but honestly I haven't read many of these threads for the last few days. If this has already been covered (beaten to death) then shoot me! While poultry takes on smoke more harshly than other meats just the same we really like the subtle taste from 3 handfuls of apple chips plus a big ol' raw onion!

Right, onions are great in the coals. I like the little Spanish ones for that. Onions also add moisture to your cooker, and barbecued ones are wonderful served on the side or when used in stocks.

Thats a first if you are talking of putting in the coals as smoke?
