So I've volunteered to cook a couple of turkey breast (about 6lbs each). I've already make one test run and it turned out great. Now to the issue at hand: we'll have to travel approx 45-50 minutes after the cooking is done. The plan is to wrap them good in heavy duty tin foil and an old beach towel and placed in a "cooler". Should I let the breast get to the final temp of 160 deg. or do I need to stop it at about 150 deg. since it will continue to cook a little longer on it's own? Do you have any suggestions of another way to do it?
We'll wait til we get to the sister-in-laws house to cut it.

Pull them at 160, wrap and put them in the ice chest. They'll be fine for 2-3 hours.
Any road will take you there if you don't know where you're going.
