Went to Home Depot to see if I could find some sort of cast iron for my mini. Found a small square piece that wasn't boxed and broken, the guy gave it to me. Who said nothing is free.
Cut round
Perfect fit
Not egged but it is food, duck confit.
Cured 2 days (salt,pepper,oregano,thyme,garlic)
Rinsed and submerged in olive oil, will cook in oven at 180 for 10 hours. Will post pics with the finished product.
My broker cooked a whole suckling pig in his pizza oven the other day. Really good.

Can't wait to see your final pics of your duck confit. I've got to get in gear and make some so that I fix up some cassoulet. BTW, that pig sure looks nice!

Thanks Molly, good times.

Thanks Rebecca. Pretty easy, followed directions for Ruhlman's book. Now I have to wait to sample the goods.

Looks great. I'd like to be able to find pigs that size!

Thanks, my brother ordered it through a butcher in near Lexington, Ma. Perfect size, probably could have squished it into the large Egg, next time.
