Stuffed filet

Having fun being home and cooking. Last night we had a filet that I butterflied, smeared w/Grey Poupon and stuffed with fresh sage, basil, mint and goat cheese. Seared near the coals, then roasted for a bit with twice baked potatoes (more goat cheese, chives, green onions, greek style yougurt, s & p and garlic). Served up with sauteed mushrooms, spinach & arugula with Richard Fl's Indian River Pepper Blend. Too good for words!
