Costco Business Center has Whole Brisket Packers

A Costco Business Center just opened in my neighborhood. It has commercial supplies for restaurants and offices, lots of kitchen gadgets and goodies, the most enormous cold room for fruits and vegetables I've ever seen, meat (packers, whole tenderloins, St. Louis style pork ribs, lots more), no dairy products, lots of drinks and snacks (workplaces must have all kinds of crap for the employees).

So I have a question: I'd never seen a packer before, and I couldn't see any clear division between the flat and the point. The packages had clear wrappings and I could see the contents very well. Is there an indicator of where to cut between the two parts?

Help please!
