What temps can any of you recommend for a 1.5 inch tuna steak? I have a Cast Iron grill with the wide flat bar up and I am thinking no less than 550 degrees (maybe even 600)

Hell, Alton Brown sears his right on his charcoal chimney. I assume the hotter the better, but I imagine that 600'll work just fine.

The last I did I used the grid at about the same temps I do my steak. Worked great. Enjoy. Sounds tasty. Almost got some yesterday, but the pieces were a bit small. Yum.

Marc,
Not very long man. You just want a crust on the exterior. The steak should be cold in the centre. If you have wasabe and sesame seeds it makes a great crust.

Thanks everyone! Had a great dinner tonight and I was just about there, maybe centre could have been alittle colder. But it was good.
Thanks, great slide show lowercasebill, and Steve you never let me down man! -
A tip from an old Cooks Illustrated magazine: If you're looking for that sushi-restautant seared on the outside, pink on the inside preparation, don't let the meat rest after you take it off the grill. Slicing immediately stops the gray from propagating inward from the crust.

I use the Alton Brown meathod, it works really well. 45 seconds a side is perfect. I coat with peanut oil (higher Flash Point, and coat with white and black sesame seeds. Enjoy! -
