OT - Tomato Sauce for the Winter

Wanted to share a few shots from this years batch of sauce...made by Gram and Mom.
This is a veg only sauce...local tomatoes, peppers, onion. A nice sweet taste...thin in consistency.
About 6 of us get a batch like this...They work real hard on it.
True goodness...and we treat it like gold!

Nice stash. I know what goes into putting up tomato sauce, we did 135 jars this year for me and some family members. Years ago we would do 250+.
I notice the rings are not on the jars and I believe they are not needed after the jars seal. Do you remove them after they seal? I always leave them on because I'm afraid they may get bumped and break the seal. After all that work losing even one jar is hard. -

Put them on right after taking the photo! I hear ya on losing it! It's tough enough to make it last as is. -

Once the jars seal it is perfectly OK to remove the rings.They can be used several times.A bump ain't gonna break that seal.It is a chore just to remove the lids.You have to PRY them off.
