I did find time to try your "Chicken on a stick". It was fantastic! I used Pork Tenderloin. Sorry no pics. Thanks for the recipe. Just one question? I could not find "Cumin seeds", so I used only 1/2 TBS "Cumin Powder". Not sure what the power difference is, but it was very tender and tasty? I will continue to look for "Cumin seed in our area (kalamazoo, Michigan). I can see where kids would go crazy for this cook! Very good! Thanks for the recipe. If you have any other recipe's that you would suggest, I would appreciate it! My email address is "esmanrsbed@aol.com"

Glad you enjoyed it! I still have to post the peanut/cashew sauce recipe. I use cumin seed because I like to toast and grind my spices. It'snice to have someparts of seeds hanging on through the cook too. How long did you marinade?

Sauce, Cashew, Peanut, Spicy, Little Steven
Dipping Sauce for Indonesian Satay
INGREDIENTS:
1 cup commercial peanut sauce
1/2 cup crunchy peanut butter
1 cup coconut milk
1/2 cup Thai chili sauce
1/2 cup cashew pieces pounded
2 Tbs sesame oil
2 Tbs crushed red chilies
2 Tbs toasted sesame seed
1/4 cup chopped fresh cilantro
water as neccessary to thin
Procedure:
1 Pound the cashews in a plastic freezer bag with a meat mallet.
Cooking Directions:
1 Combine all ingredients in saucepan and heat slowly. Add water to develop a consistency between the commercial sauce and the peanut butter or your preference
Special Instructions:
1 Serve warm with satay skewers

I did the marinade it for 2 days (48 hours). It was a great flavor and will do it again. I just want to locate the Cumin seed, maybe it will even be better. We put it over white rice, with a small amount of marinade over the top. Very good and enjoyed the cook! Thanks again!

Rich, most Indian grocers sell cumin seeds. Are these stores close to you?
