It has a lot of butter and full cream. One of the mildest (heat wise)indian curries.I started with Tandoori chicken as that is the authentic method. The sauce base is tomatoes, butter and cream. I didn't use a recipe on this one but I can send you the ingredients.

I must be an extremely lousy cook cause it took me a whole day just on the sauce. The chicken would add another half a day and the masala a couple of hours. I didn't use any Gee in mine as I prefer the taste of ghee.

Since Gary asked for Steve's butter chicken recipe and you jumped all over the post offering your own recipe - maybe - just maybe Steve was entitled to respond to the post with his version.
I know that Steve worked hard preparing the dish and it tasted amazing - BTW were you there to taste it? I didn't think so! I think it's a matter of respect - in my opinion, you should know better.

My spelling errors are generally a result of poor typing skills. My comment was intended to let you know that there are thousands of ways to mimic a dish. The dish usually suffers for it too.

It isn't nearly my favourite Indian cook but it is supposed to be the most popular. This is the first time I have done it from scratch. Mr. Potatohead, GOV or Molly could tell you if it was worth the effort because I made it for Icefest last year. I used bottled sauce and tried to enhance it for that one. Patak has a fairly good bottled version if you want to see if you like the flavour.

REALLY!!! So do you add food coloring to make it that beautiful color?? As for the spices do you toast them yourself and grind them?? I can tell you it really isn't easy when you make butter chicken from scratch.

I was really happy with the colour. I fried two quarts of really ripe plum tomatoes, two small cans of tomato paste, saffron soaked in hot full cream and Kashmiri chilis and Kashmiri chili powder. Not as hot as most Indian chilis. I really didn't want to use red dye. I hope somebody got a pic of the gravy.

saffron and turmeric will definitely give you good orange and red color without having to use food coloring. Also paprika and for mexican or southwest foods you can use achiote seeds a.k.a. annato
