Stuffed Poblano's and Chile relleno Dip

Picked up these nice Poblano's last week at a farmer's market for a buck a piece. Nice size compared to the grocery one's. Decided to stuff them and use part in the Dip.
The raw's, minus some paprika, chili powder, cumin and rice(forgot those for the pic).

Also, used some Monterry Jack Queso for the top of the dip. Mrs.FoodPolice made some guacamole from scratch to top it off.

Charred the peppers directly:


On for a little cooking:

Ready to eat:

Basically mixed the raws with the rice and beans then stuffed the peppers. I used what little lump I had in the large and got it up to 300, then cooked it to temp. Nice meal for a change!

Yeaaaaaaaaaaaaa that's what it's all about.........do you know that we are celebrating 200 years of independence in September....& this is our dish....just like the colours in the flag....green chiles, white cream...& red pomegranate that you substituted for red salsa.. :P
