Kicked off the holiday weekend with a simple spatchcock. Used the rest of the quick spice blend I made for some tasso I will smoke tomorrow with my spare ribs. 350 degrees for 1 hour on direct heat. Moistest chicken I have ever made. BGE continues to amaze me. My poor Webber just sits and watches.
