I have 12 poblano peppers ready to be picked. Besides Chili Rellenos, does anyone have some good recipes?
So far I'm thinking about Ross in Ventura's stuffed poblanos.

Poblanos are hard to come by in my part of the continent. Love chili rellenos though. Burn the peppers in a really hot egg,put them in paper bags and get the skin off. Stuff with cheese and chorizo and/or refried beans. Some serranos or jalapenos or both. More cheese on top and return to the egg. Pico de gallo or salsa on top.

Poblanos are mild, so you could also substitute poblanos for green peppers in just about any recipe, unless you're feeding people who are really sensitive to heat. I'm thinking about beef and pepper stir fry, or fajitas.
If you've got all day to cook, sometime, find yourself a recipe for mole poblano.
You could also leave them on the plant, let them go red, then pick them, wash them, and hang them to dry. Dried red poblanos are called ancho chiles, and are used as the base for most chili powder mixes. -

I char them, peal them and fill them with a black bean puree that I make and top with goat cheese. You can also make a great sauce by pureeing with balsamic vinegar and avocado.
