Looks as if I have quite a bit to learn!
I can't believe how he carved every piece of meat off of that pig head. Talent. The only thing I would carve out of a pig head would be the cheeks.

they had pig jowls at ASSI today.. what would you do with them?? they did look good!
but i bought the pork skin instead,, a bit gross even for me.. NO, i do not know what i am going to do with it.. but who else has a package of pig skin in the fridge?

bill, now that I am on a bacon kick, I would make guanicale, an unsmoked Italian bacon. I would consider using it in Spaghetti Carbonara with my green eggs, lol.
