Welcome home neighbor...

Morning All:
Our next door neighbor has been gone for a couple months visiting children & grandchildren all over the country and when she emailed that she would be getting home today, we told her not to worry about dinner...we'll take care of it, so we did.
While we were at Sam's Club this morning EggHatter saw a package of two whole chicken's and decided she wanted something different...we normally just do boneless/skinless breasts, but tonight was spatchcocked...here they are just after putting on the Egg...the one on the left has Sorry Boy's Chicken Rub and the one on the right has DP Shaking the Tree...
Went raised grid (top level of the adjustable rig), direct with dome temp about 375 most of the time, two chunks of cherry & one chunk of guava...turned them over after about one hour as the internal temp was about 150 in breast & 168 in thighs...after another 15 minutes, flipped back over and ready to take off...

and sliced breast meat...
very moist and tasty!
Added sides of sweet potatoe rounds (with DP Pineapple Head)...
and grilled squash with DP Shaking the Tree...
Needless to say our neighbor went home full and happy to not have to cook after driving all day!

Jay, that looks nice and I'm sure your neighbor appreciated it. You two are very thoughtful to cook a nice welcome home dinner.Happily egging on my original large BGE since 1996... now the owner of 5 eggs. Call me crazy, everyone else does!

Jay: Always the thoughtful one! And I mean that! I am sure your neighbors were SO grateful! Great looking meal. I can only imagine being welcomed home by a great meal like that after long travels!! We need to try those sweet taters like that, too!

SSN686, that is some Big Boy Chicken you cooked there!!!! Good job! One thing I have started doing (not with Spatchcock, but more with pieces), is get it to about 90 percent, pull it and toss in honey and BBQ sauce. Like a chicken candy. About the only way my kids will eat more than a piece or two!!!
