Just an update from my previous thread on the results of my pulled pork cook.
Ended up taking it off after 16hrs at 204.
Wrapped it up for an hour in a cooler and pulled it apart. Very tender!
Everyone loved it at the party!

16 hrs, what was your dome temp.?
-
It was at 250 for the majority of the cook. I had a problem overnight as the dome temp dipped below 200 while I was sleeping. Meat was ok though, as it was at 141. My fault...I forgot to set a low temp alarm.
Got it back up to temp early in the morning. That probably extended the length of the cook. But it all turned out ok. -
Looks good. Thanks for the invite, in fact I had to make an unplanned visit to Sheppard/McCowan (really close to Agincourt) but I was in a big rush. I'll keep the rain check :P

Looks good!
The last time I did a brisket I turned off the maverick's alarms by accident in my sleep (don't ask!)... I woke up and it was at 205 deg. I freaked... It was fine though..
