Thanks to all that responded to my post.
Quick summary:
- Ribs turned out pretty darn good, but could've been better
- Total cook time 5.75 hours
- Some racks cooked a little unevenly, more done on ends, less done in the middle
- Fed a group of 15+ and everyone was happy, we even had a few leftovers
Lessons Learned:
- Will probably use a similar setup for 9 racks next time
- Plan to foil the rib ends method (thanks Wess) versus using foil on the grid
- Might try using 3-1-1 and foil all the ribs and throw them in the oven for the middle hour to cook more evenly throughout
Here's one last picture of the results:

They look real good from here.Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given another Mini to add to the herd.

Nice I wondered how you were making out! thanks for sharing

How did you have them setup?

Nevermind, I just saw the other post. Nice job.

They really look pretty good from this perspective ! :woohoo:
Another option, learned form CWM is to cut the racks in half, so the ends don't hang out so far and it's not so far from the end to the center, thus the centers get cooked better.
I wondered when looking at your initial pictures if enough heat would be able to get under that pile and into the central ribs on the middle of your v-rack.
if you do 3-1-1, no need to use the oven, you can foil wrap and put back on the egg - same results and the ole oven stays out of the mix.

The ribs look great!
