A couple of other notable cooks. First, spaghetti with beef, smoked almonds and basil.

Really fantastic recipe (just google the title plus "Giada"). The sauce is served cold and is very herby. Along with well cooked flank, the almonds really shine. Give it a shot.

Next up: pork chops stuffed with feta, cream cheese, sun dried tomatoes, and spinach. I have to give Kiki credit here - don't know where she dug this one up. When paired with a delicious squash casserole, it was a fantastic meal. Thanks for looking.

    Sure.

    10 oz. frozen chopped spinach, drained.
    1/3 cup sun dried tomatoes
    1 clove garlic, minced
    1/3 cup cream cheese
    1/2 cup goat or feta cheese
    S&P to taste

    Sauté spinach, garlic, tomatoes in oil. Remove heat, stir in cheese and then stuff.

    Thanks, Doc. I was skeptical about the pasta, too - the sauce actually looked exactly like my homemade salsa - but, truthfully, it was better than the chops.
