Is Bobs Red Mill Vital Gluten flour an additive for flour? Came across some at a local grocery store and wondered if it was an additive, or a direct substitute for flour when making pizza dough.....thanks in advance for your reply

Bob's Red Mill is a brand of flours & meals. Vital wheat gluten is not flour, but rather is added to doughs...100% whole wheat recipes often call for a bit of extra gluten to overcome the heaviness of WW (due to bran's effects on the gluten strands).
