Stuffed Zuchini

Stopped at a farmer's market on our weekend getaway and saw these odd zuchinis. They were much fatter and sqautter then the normal kind. The guy selling them said they are great for stuffing so we did that.

Stuffed with ground turkey, sausage, onion, apple and stuffing. Covered with velveeta, mozzarella and pizza sauce. Egged at 375*F for 40 minutes. It was fantastic.

    Awesome way to cook those!! They are calabacitas, which is spanish for zuccini. Traditional way to use those (in this region) is dice them add freash toms, hot (hatch)green chilis, onions and fresh grilled corn. Saute all of that with garlic s/p. Really delishous!!
