Got up this morning at 3:15a not sure why but I did, I had a brisket I planned on cooking today. Here is a before picture, just some basic BBQ Rub and fresh cracked pepper,
Fired up my BGE at about 4:00a and set it up for indirect at 250
I like hickory so that is the smoke wood I used. At about 5:30p brisket is done, wrapped it in heavy duty aluminium foil and let it rest for an hour. Then sliced it up and had some great eats...
