What temperature do you cook monkfish to?

  • Wikipedia says 140 to 145 degrees. This seems well done to me. It depends on how you like your fish. I like cooking it til it just begins to flake, but it needs to be watched closely. Take it off early and let it sit a minute or two. Throw it back on if it's not the way you like it.
