Last weekend's Cowboy beans & rib eye

Last weekend got a bug to make some beans and had all the fixins. So soaked dried pinto beans overnight. Sauteed chopped onion, poblano, jalapeno, green pepper and garlic.
Added chopped bacon.
Then chicken broth, tomato paste, lots of cilantro and cayenne pepper. Put the beans on the egg stablized at 225.
Seared the steak on the coals for 90 seconds a side. Finished with the vents closed for 4 minutes.
Plated with fried potatoes and a roasted corn & tomato salad. Too good!

Teresa, very nice, I'm not much of a steak eater, but that just looks great, love the fried pertaders too, nice touch, & the sides, great dinner - but where's the beverage :ohmy: :laugh:happy in the hut

The coals really don't leave a taste at all and the steak gets a really nice crust, which we love.

What a show. I am all about Splashy and Flashy. Invite friends over and throw the steaks on the coals, then serve a meal like that!!! Well done.

2 minutes for the steak but how long for the beans? I cooked some navy beans for 4 hours a few weeks ago and they were still tough (but the were good when they were done)

KB, I had the beans on the egg for about 2 hours, but you are right, they were tough. Ended up moving them to the stove and simmered a few more hours. Even after soaking for more than 24 hours.

I just fire roasted the corn on the egg while the beans were still on, then cut it off the cob. Had cherry tomatoes from my garden and avocado. Dressed with lemon juice, evoo, s & p.
