    Msmith,
I haven't tried this on the egg with the crab stuffing, but I wrap large shrimp/prawns (maybe something like 12-16 count or bigger if I can find them) and large sea scllops with proscuitto (sp). I like to coat the shrimp/scallops with a little olive oil/crushed garlic, sprinkle just a little bit or coarse, noniodized salt (prefer good sea salt), a little sprinkle of lemon or lime, wrap with a very thin slice of the ham, pin with a toothpick and on to the egg for just a few minutes. I don't let them sit long before cooking cause the lemon can make them tough. Also, don't overcook or they will be tough. This is more grillin than smokin so the fire should be pretty hot. A little alder chips works pretty well. Proscuitto is salty so you might want to skip the sea salt. I like salt and don't find the combo overpowering. While I am not a big fan of black tiger shrimp, they work okay in this arrangement as long as they are fresh.[p]Might have to try this with the crab!
