I'm a total dark meat fan bill....those look great! What did you use for rub...smoke? Temp?

rub was 50/50 mix of freds music and bbq 'savory poultry' and traditional turkey'
smoke was three pieces of julies applewood,,amazingly different than store bought applewood,, it is so much more appleier? appleisious? appleish?
platesetter legs up>c-i> steam tray drip pan, grid on that. 325° till first check [110°] then bumped to 400-425° till done,, i did not rotate and there were some smaller ones so done temps ranged from 190 -200
i like the slower start. i think it renders more of the fat as did not have time to trim as i prefer -
i like them as they are easy to do and good anywhere between 180 and 200+ so i can wander off into the garden, self medicate and not worry about perfect timing.

thanks ,, it is a regular here because it is so forgiving ,, seems no matter how i cook them once they get above 180 they are good and i have yet to dry them out regardless of how much adult beverage i consume

i usually do direct or just a drip pan but the egg was in rib mode from monday,, it is worth the try,, do need the 400 temp for some part of it..
