Filets on the Half Shell

Did two 5oz. Filet Mignons tonight on the egg. Had an issue getting it up to temp as it was quite spent lump from a low and slow and I did not feel like adding any more because I have another low and slow Sunday. Anyway, put them on at 275 and let the tep rise to about 350. Kept them on for about 25 minutes and dog on they were juicy as could be and purty darn tasty. Had them wrapped in bacon with kosher salt and fresh ground pepper for a rub. I swear you can not mess anything up with the egg....
