You mentioned breakfast quesadillas as a way to use pulled pork leftovers. I know what quesadillas are but what makes your "breakfast" Do you add scrambled eggs? I need a little inspiration here for doing a nice Mother's Day breakfast using some PP. I will take any and all suggestions under advisement. Thanks in advance.

    Sorry, I just now saw this. We don't do anything different for breakfast quesadillas, except have them in the morning with my favorite bold roast coffee!

    I suppose one could put eggs in them, but we normally go with cheese and pulled pork (chopped fairly finely) with some sour cream, guacamole, and fresh salsa on the side.
