After the brisket has reached 190 and taken off the egg, wrapped in foil, towell, and placed in cooler, how long do you think the brisket can stay in the cooler at a safe temp?

    Many hours. However, to satisfy your curiousity - and ours - why not stick a thermometer in the meat while in the foil and see how long it takes to get down to 140. We would love to know that answer.
