quick egret ham question

Do I cook the ham in a pan, or directly on the grate? Thankls!

I do it indirect, on the grill, with drip pan underneath.

I cook it according to the recipe on a raised grate indirect using my plate setter with legs up. Then to catch any drips I merely foil my PS instead of using a pan so I don't have to clean up the pan!Re-gasketing the USA one yard at a time

I have one on right now, Alton Brown's City Ham, indirect on grid in a pan.

I have. 14 lb spiral cut ham on a raised grid indirect. I will also be adding 3-3 lb boneless turkey breasts on the grate that sits on the platesetter.
The ham is wayyyy up in the dome, you can touch it from the dfmt!
I love the homemade raised grates!

in that case make sure your dome thermometer hasn't impaled the ham. Sounds like you have a lot going on!Re-gasketing the USA one yard at a time

That's funny, I do have a lot happening. Doing a couple trays of mushrooms too.
As for the thermo, I pulled the clip from the inside of the dome and put it on the outside of the dome. Clearance looks ok!
