hey rodney, little late aren't you?? first two sedars were monday and tuesday nights!! LOL....
regardless here is a link to how i did my pesach lamb.. . i used a nice big chunk of cherry.. . came out great. . . i bet any nice mild wood would be good...i almost went with pecan.. .
i wouldn't go lo and slo though. .. .i'd still stick with 'roasting' temps (between 325 - 375 degrees), but thats just my opinion....

It looks like in the recipe section, they are using mild fruit woods, in most of them.
Great to see another egger close by, I go by Valdese a good bit, mainly on my way to Asheville, making sale calls. -
Grapevine is without a doubt the best smoke for lamb.

i use dried grapevine like bob mentioned, if you dont have that a few sprigs fresh rosemary is good too. big thing for me with lamb is medium rare to almost rare, with some good charring, its not as good without the charring imho so i go trex style with these. sear and a 325 roastfukahwee maineyou can lead a fish to water but you can not make him drink it
