My daughter wanted pull pork for her baby shower so I said sure, how many coming. The count is 25-30 people. I get everything ready. I boned out 5 7-8 lb butts and gave them a good 24 hr JJ Rub with fresh rosemary, sage and thyme wrapped inside. In order to make sure the meat will be ready for 4:00 pm WED. I came home from work today at 12:00 noon and set the roasting process in motion. I started a great Wicked Good Lump up to the top fire bed, put the meat on covered with mustard(barely closed lid with 5 butts)turned on the Guru and said can't wait untill tomorrow.THEN it happened the wind shifted and now gusts 18-22 mph are hitting my Egg.So far the Guru is holding temps in check, but this is the first time I have ever seen the dome temp change so much. Time will only tell[p]I will post tomorrow

MR H,[p]What does "I boned out 5 7-8 lb butts" mean? It sounds like you are saying that you took the bones out. Is that right? If so, howcome?[p]
