Hey Granpa's Grub!
I'm gonna do the Char Sui in a couple of days with Grandpa Kwock's recipe.

Wondered if you ever got around trying it with wood chunks (or if anybody else did after seeing this excellent looking recipe!)

On that first cook I didn't. However, eating some 2 days later there was quite a bit of smoke flavor in the meat, very good. The marinade was a bit weak. Next time I will make some extra marinade for the re-heat.
I will also try some cherry or apple wood. I would think JD #7 chips wold be good too.
When you work up the ingredients keep in mind the honey is used as a baste at the end of the cook. I mixed the honey in with the rest of the ingredients and it turned out excellent.

I used the remaining marinade for a baste and basted twice during the cook. Once about 5 minutes before pulling. I am not sure what adding a second coat of honey would do. The cook was not too sweet.
Just another thing to try.
