? About my butt

I'm cooking an 8lb butt for a family get together Friday evening and was wondering if I could shave a little time off the cook by increasing the temp to say 300, would doing so make a huge difference in the final product, even though I will still pull at 200 internal temp? precludes me from doing a long lo & slo Thursday into Friday


  • You should be fine, Sooner. I usually do the old faithful 250º overnight routine, but if you're pressed for time, you'll still have some fine BBQ if you crank her up a bit. Take a look at the link, below:

    He goes as far as 350º and claims they're done to 195º internal in roughly 5 hours.

  • No problem, Michael. Report back and let us know how it turns out. Note that he foils them at the three hour mark.

  • The hot and fast butt is all I do now, 350* for 5 hrs total....for 3, then last 2 hrs foiled to an internal of 200* and in a cooler for about an hr or great!!
  • It wasn't the plan, but I did a fast cook right after I got my BGE. It was due to my poor temp control. The fast cook didn't exactly line-up with the offical fast cook profile, but the temps certainly exceeded my original plan and the butt was done in around 6 hrs. Tasted good and no one complained.
