Buckboard Bacon started (long and pic heavy)

Well I heard a rumor that a storm was coming, and last night I drove through some snow and slick roads so today I used all that as an excuse to wrap up the day and get off the road.
Came home at 12:30pm. Seemed like time enough to get my bacon on. Three boneless shoulder roasts about 3.5lbs each. One peppered..for me.
After 1.5 hours at 180, and 1.5 hours at 200 we're around 100 internal.
Stopped off and bought a soldering iron today too. Didn't get to have beer since I was still working, I had to use a diet coke can, hope that doesn't ruin my cheese.
On the mini

All the cheese from my first batch was committed to Christmas presents for the neighbors. That didn't seem right, so I did some up so that there is some for me...and some more to give away.
This is my first Buckboard Bacon. No reason to think it won't turn out, but I have first time jitters. -

I started my first batch of Buckboard last Sunday, and I have another week before it is cured, please keep the post updated, and let me know if you have some advice to pass on. Sure looks good to me, I cant wait for mine to be done
