How long for pulled pork

Hi all,
I'm treating my team to a pulled pork lunch on Wednesday and need to know how long to egg 2 butts 7.5 and 8.5 lbs on a large. (also what temp) I think last time I tried was about a year ago and I could keep egg temp stable at 225 degrees.

Bump the temp to 250 and it will take between 1.5 to 2 hours per pound depending on the amount of fat and collagen in each piece.
Cook to temp not time. You want each piece to be 195 internal. -
Indirect,250 dome.1.5-2 hrs per pound.Cook by internal temp not time.Pull off egg at 195 internal,wrap in foil and place in a cooler to rest an hour or two.Pull and enjoy.

I like to cook at a dome temp about 260 and pull at 195. Should take you about 12 hours at that temp. If you're running late just wrap it in foil to speed it up.
