Smoked Cheese Success

Smoked four blocks of cheese last weekend using apple chips. Tried a sample on Tuesday and it was bitter and somewhat disgusting. I allowed it to set in my beer fridge until today and pulled them out for another sample. Goooooood! It mellowed down nicely and is very tasty and addicting. Vacuum packed most and will go with a bigger load in the near future. However, there is a strange smell coming from the bedroom but I can't blame the cheese and think it has more to do with cutting the cheese. :blush:

    I smoked my first cheese Friday and when sampling while cutting I also thought it had a bitter taste. Glad to know it will mellow out in a few days!
