I want to do Cuban Pork for Xmas Eve. I planned to do a whole ham using Steven Raichlens recipe, but I see a lot of folks here use a pork shoulder.
If I use a whole ham, around 20 pounds, how long will it take to cook at around 275 degrees? I know a pork shoulder will take around 2 hours a pound.
Opinions?

What temp did you do it at? I have a 20 pound ham that I plan to cook at around 275.
