Buckboard Bacon Question

Ok, I got the bacon curing. They are smaller boneless pork shoulder roasts. I had planned an 8 day cure. Got it all ready to go, then the family changed the plan for Christmas.

My question is, if I cure 8 days, can I rinse it and then rest it for 2 or 3 days before smoking it?

The directions on Playing with Fire and Smoke state to rest 4 hours to overnight, the longer the better. Will it be ok if I extend the overnight to 2 days?
