Thanks for the ingredients. Was it a ceviche with all of the citrus juice and then a sear on the grill, were they dry scallops, and what is rooster sauce? Forgive my ignorance, but I cook scallops often, and those sound and look good.

NO ceviche. It was a quick 4 min marinade to make sure they didn't get tough or mushy as they can when over marinated.

is "rooster sauce." Accept no substitutes if you can get it. Huy Fong brand is tops.
Dusted them in a little flour wit Old Bay mixed in. You want this to give them the nice browning on a hot sear. I use a well oiled cast iron skillet on my mini. These were dry scallops but I've used frozen too. they always come out good. -
