BB Ribs

I would like to do BB Ribs (3 racks) skipping the foiling, cooking them for approx. 5-6 hrs. Can I get some good suggestions?
I've done them 3-1-1, liquid in a drip pan, foiling after the 3hrs for 1 hr. then 1 hr. direct, basting w/favorite sauce. These were done @ 250 deg. came out fantastic. Looking for the same results. Thanks in advance.

Ditto crghc98 suggestion. Since I started using this method, the ribs turn out just as I like 'em...I wont go back to the foiling method
