My first attempt at stuffed pork tenderloin. Stuffed with spinach, spaghetti sauce, provolone cheese. Dusted with rub. Wrapped in bacon.
Still need practice on flattening the tenderloin better.
Very juicy with an abundance of great flavors. Easy to do and makes for a fast satisfying meal. Next time I will double the stuffing. Live and Learn.

if you need some flattening help use the heaviest bottomed pan you have (i have a 6 inch omlet pan that has one of those pieces welded on the bottom) and smack the snot out of it..
yours looks a heck of alot better than some of the ones i have done before :ohmy:happy eggin

Ros...Great looking cook!! Something that may help you a TON with your stuffing, is pre cook it, especially the spinach. You can take a peek at this recipe if you like...many eggheads have made this very successfully, and it may help you get a good start for your next one!

Those are silicone ties I found at a culinary store. They work great and are reusable.
