A couple of weeks ago I cooked some wings following the DP recipe. They turned out great.

We liked it so much that I used the same breading for some chicken drummies planned for today's lunch.

A couple of questions if anyone can lend a hand. Is direct at a low temp the best approach? The wings cooked at 250 for about two hours. If I cook at the same temp, should I plan on that long again? At least with the drummies I can cook to temp.

Also - want to add some smoke to them as well. I picked up some maple chips about three months ago as an impulse buy. I haven't used them yet because I have the thought of maple syrup in my head! Anyone had any luck smoking with maple?
